For guaranteed success, I suggest these five tips:
- Use fresh eggs – They have a better flavor. We recommend choosing farm-fresh or free-range eggs.
- Whisk the eggs well – Beat them thoroughly so the yolks and whites are fully combined.
- Don’t overheat the pan – Otherwise the butter will burn and affect the taste. The butter should be foaming when you add the eggs.
- Cook over medium heat – Too high a temperature can quickly dry out the omelette, giving an unsatisfying result. Medium heat works best.
- Don’t overcook the omelette – When the center is still slightly soft, fold it. The residual heat will gently finish cooking the omelette.
